Wild About Wild!
By Doug Singer
Wild opened its doors in NYC in 2013, offering people quite simply the best pizza made with organic, gluten-free flours and tomato sauces, and hormone-free cheeses and meats. Fast forward to today and they now have three locations including Las Vegas and Williamsburg that share this memorable nom de plume and are leading the charge in an alternative, healthful eating style that sacrifices nothing and simply put, delivers a flavor-filled punch with every dish. It is no wonder that celebrities like Susan Sarandon, Sarah Jessica Parker and Kiefer Sutherland have crossed their threshold.
I headed down to their most recent location in the West Village to see what all the fuss was about. Upon entering this quirky, cozy and simply charming environment, I was at home from the get go. After settling in with a glass of wine and some good conversation, I started with the classic Buratta (served with fresh tomatoes and a balsamic reduction) and the Bruschetta which both highlighted sunshine-fresh flavors in what was a tantalizing beginning. By all accounts, this was classic, high-quality Italian fare—then came the pizzas. Gluten-free, or not, the Wild White (mozarella, ricotta, truffle oil and cracked pepper) knocked me straight on my ass—perfect, delicate crust—not too thin, not too thick and flavors that simply sang! It is no wonder Sir Paul McCartney was raving about this gem on his recent visit. Not to be outdone, the Wild Mushroom Truffle (with ricotta and herbs) was flirting with rockstar status as well.
Moving onto the entrees was a smooth segue as we dove into the Chicken Parmesan served with gluten-free spaghetti and savored a perfectly executed piece of Wild Salmon served with mashed potatoes and broccoli rabe.
The delivery of a tray of gluten-free desserts was more than welcome and the Peanut Butter Bomb was truly a delightful, sweet, flavor explosion.
All-in-all Wild has caught my attention and apparently I am not alone. Named "The Alternative Pizza Pioneer" by the Food Network and boasting a celebrity “who’s who” as it’s client list, Wild is a quality and delightful dining experience no matter your dietary preferences.
