Graffigna
Recently, I had the pleasure of dining at BLT Steak in New York. The occasion—a paired tasting designed to highlight the wines of Graffigna, a superb and historical Chilean winery. Founded in 1870 by Italian immigrant Santiago Graffigna in San Juan, Argentina, drinking Graffigna wines are like stepping back in time.
We got started with a Tuna Tartare (crispy shallots and soy vinaigrette) and the Crab Cakes (meyer lemon and radish salad). This was exquisitely paired with the Graffigna® Centenario 2011 Pinot Grigio. This 100% Pinot Grigio held its own beautifully and was an impressive start to the ultimate enjoyment of this fine experience.
Next up was the Roasted Organic Farm Raised Chicken (lemon-rosemary stuffing). Served with the Graffigna® Malbec 2008 Grand Reserve which proved to be a sensual and lively counterpart, this course was extraordinary. With deep violet, red and purple hues, this aromatic and beautiful wine was extremely well received.
The Graffigna® Centenario 2010 Cabernet Sauvignon stood up beautifully to the richness of the grilled New York Strip Steak (green peppercorn sauce) and the sides of Yukon Mashed Potatoes, Hen of the Woods Mushrooms and Grilled Asparagus. This handpicked delight will compliment a wide array of dishes and the roasted aromas from its oak aging will keep you coming back for more.
