Through the years, one of my go-to and most well-loved Indian dishes has been my beet cauliflower croquettes—so much so that I’ve made it one of the signature dishes at the Chauhan Ale and Masala House. I’ve tinkered with the ingredients and cooking method a bit, but the flavor has mostly stayed the same and my family just loves it. For some reason, I’ve kept the recipe quiet, not publishing it any of my cookbooks or anywhere public. Until now!
